David’s Blueberry Pancakes

Yves Asselin: My Friend David Waisglass used to do these for me in the late 80’s... Easy and delicious


Ingrédients :

  • 500 ml of Aunt Jamina Buttermilk Pancake Mix (non-instant)
  • 750 ml of milk
  • 1 egg
  • Butter
  • 200 ml of wild blueberries (yes, the small ones)
  • teaspoon of vanilla bean extract (the real stuff)
  • Pure Light Grade Maple Sirup (medium will suffice)

Rinse blueberries and dry thoroughly with paper towel. Make sure blueberries are dry and at room temperature; otherwise the cooked pancake center will be soft and runny.

Mix milk, egg, and vanilla extract in bowl. Add Pancake powder and stir until smooth. Let stand for approximately 20 minutes until it thickens. Use ladle to pour pancakes onto a hot well-buttered fry pan. Sprinkle a several blueberries onto each pancake. When they bubble in the pan and brown at edges, flip the pancakes and cook briefly until done.
