Savoury Pepper Steak


Ingredients:

  • 1½ pounds (680 grams) of beef round, cut ½ inch thick strips.
  • ÂĽ cup (60 mL) all-purpose flour
  • ½ teaspoon (2.5 mL) salt
  • 1/8 teaspoon (0.625 mL) pepper
  • ÂĽ cup (60 mL) hot shortening
  • 1 can of tomatoes, drained, reserving liquid. (796 mL)
  • 1Âľ cups (415 mL) water
  • ½ cup (120 mL) chopped onions
  • 1 garlic clove (minced)
  • 1 tablespoon (15 mL) beef flavor gravy base powder
  • 1½ teaspoons (7.5 mL) Worcestershire sauce
  • 2 large green peppers in strips
  • If gravy is too liquid, add 1 to 2 tablespoons (15 to 30 mL) of all-purpose flour
  • 2 cups Rice

Directions:

Cut beef round into ½-inch thick strips. Coat with a mixture of all-purpose flour, salt, and pepper. In a large skillet, brown strips in 1/4 cup hot shortening.

Drain the can of tomatoes, reserving the liquid.

Add the reserved liquid to the meat.

Add 1 3/4 cups (415 mL) water, chopped onions, 1 minced garlic clove, beef flavor gravy base powder.

Cover and simmer for 1.25 hours until the meat is tender.

Uncover, stir in Worcestershire sauce.

Cut 2 large green peppers into strips and add to the meat.

Cover and simmer meat + green peppers for 5 minutes.

If the gravy is too liquid, add 1 to 2 tablespoons of all-purpose flour with equal amounts of cold water.

Add drained tomatoes (cut up). Cook for 5 minutes more.

Serve on rice.
